For vegetarians out there and those who are looking to utilize the allowed substitution of eggs once every 2 weeks, this recipe is for you!

1 melba toast
1tbsp 2% milk
1 egg yolk + 3 egg whites, beaten
100g strawberries

Soak 1 melba toast in 1tbsp of milk until it becomes bread-like. Not TOO soggy, you don't want it to fall apart.

Dip the melba toast in the egg mixture, and fry it up in a teflon pan (no oils or butter)

When it's done, sprinkle cinnamon on top.

Scramble the rest of your eggs.

Cut up 100g of strawberries and put some on top of the "French" melba toast

Sprinkle with stevia if desired
