I know this sounds weird but I was feeling experimental last night. I took some cod fillet and sprinkled it with salt and pepper, lots of lime juice, some hot sauce and topped with coarse ground mustard. Baked at 375 until the fish was white and flakey. It was surprisingly delicious. I would not have usually used mustard and cod fish, but I have heard of Dijon chicken and this did not feel too far off.
