    Eggs!

    I need an egg recipe for tonight!
    I've got a craving!
    I've got "real eggs", egg substitute, egg whites.

    Well, I have eggs almost every night. I mix one whole egg with three egg whites, and either bake it in my Teflon pan, or in a microwave. Delicious with a tomato and onion salad. Very simple, but of course use any seasoning you like.

    Thanks Mia! I just needed something other than fish and chicken! And I have lots of egg options!

    I do have egg whites periodically..not so much this round but on my other one I did. I did fine with them and I just would scramble them with some cherry tomatoes or something and put on some hot sauce..it was a little spicy and warm..and just made me feel cozy. Felt closer to comfort food when I needed it.

    Well, I guess thats what I was looking for last night. Comfort!
    I did get my eggs! Upon Amy's suggestion, I scrambled ! Egg w/9 T's of eggwhites (3 eggwhites), added in some sauteed green bell peppers and jalapenos (I didn't have any tomatoes in the house :/ ). Then I topped it with this awesome "sweet bell's marinara" I make, and fresh scallions. It was delish!! Hit the spot, and kicked the craving to the curb!

    Sounds yummy! I do 1 whole egg & 3 egg whites a few times a week. If I just need extra protein, but I'm out of calories, I just do egg whites.
