Excellent salad for P3. You could even put it on a large, grilled Portabella Mushroom cap.

Cucumber & Tomato P3 Friendly Salad

1 large tomato, cut into large chunks
1 cucumber, cut into large chunks
1/2 of a red onion, thinly sliced
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar (make sure it has no sugar)
1/4 cup fresh basil, chopped
sea salt & pepper, to taste

Mix everything, except the basil, salt & pepper, in a large bowl. Place in the fridge to let the flavors marry for at least 15 - 30 minutes. Just before serving, toss in the basil. Season to your own taste with the salt & pepper.


This makes 2 large servings.
