3 C almond flour
2 tsp salt
1 tsp baking soda
1 TBL cinnamon
1 tsp nutmeg
1/4 C grapeseed oil
1/2 C agave nectar
5 eggs
3-4 C grated carrots
1 C raisens
1 C nuts, chopped

Spray and dust (with almond flour) 2 square or round pans. Preheat oven to 325.

In large bowl: almond flour, salt, baking soda, cinnamon and nutmeg.
In med bowl: oil, agave, eggs.
Put wet into dry and blend well. Add carrots, raisins and nuts.
Into the pans - bake for 45 min, test with toothpick.

Frost with:
1 C cream cheese (8 oz, softened)
1 TBL vanilla
1/4 C agave
Mix together well, then fold in 3/4 C whipped cream
